After a naughty few days indulging in yummy foods accompanied with a glass of something sparkling, I needed a health fix. On returning from the gym I whipped up this tasty dish in minutes and accompanied it with one of my favourite smoothies. (See separate smoothie recipie)
Talk about getting your 5 a day...
Ingredients:
1. Two hand fulls of Spinach
2. 1 Courgette
3. 1 Figs
4. Tea spoon of Honey or Agave Syrup
5. 1/4 of an Avocado
6. One Turkey steak
7. One table spoon of mixed seeds, (Pine Kernals, Sunflower seeds, Pumpkin seeds)
8. Coconut oil
Method:
1. Heat a griddle pan and once hot place in the turkey steak, season with salt and pepper. Remember to flip it over after a few minutes of cooking.
Whilst the turkey cooks...
2. Place the spinach in a bowl
3. Using a Julienne Peeler, peal the courgette all the way down to the seeds to create lovely long ribbons.
4. Fry the courgette in coconut oil until they begin to soften, about 2-3 minutes should do it, as you still want a bit of a crunch.
5. Place the courgettes on top of the Spinach, the heat of the courgette will wilt the spinach a little.
6. Chop up the fig and place it in the same pan, drizzle the honey or agave syrup over it and fry for 2-3 minutes until it softens.
7. Throw in the seeds 2 minutes into cooking the figs, this will not only cover them in honey but it will increase their flavour.
8. Whilst the figs and seeds roast, chop up the avocado and place it on the salad.
8. Add the figs and seeds to the salad.
9. The turkey should be done by now, slice it up and place it on top of the salad.
TIP For a healthy dressing, juice a lime and mix it with a little oil. Drizzle this over the salad for extra acidic kick to cut through the sweetness of the figs!
