These muffins are so versatile, you can put anything in them.. I went for smoked salmon and spinach as it's what I had in the fridge. You could do them with ham, mushrooms, chorizo and onion, potato.. Any combination you would have in an omelette really!
Ingredients:
3 eggs ( I used two whole eggs and one egg white, just to keep the fats down)
A healthy dash of milk
I used frozen spinach, about 3 big cubes
Smoked salmon
Pumpkin seeds
Method:
1. Simply whisk the eggs and milk together and throw in the ingredients! - I haven't really given exact proportions because you can throw in as much as you like!
2. Once combined, pour into muffin cases and top with your seed of choice, if you want to, and pop in the oven at 180 degrees for 10-15 minutes, or until cooked.
Either eat hot or leave to cool and have at another time. I take mine to work for breakfast or lunch, great if you are on the go!
